Green Salsa
(Salsa Verde)
A fresh, delicate sauce. Use with grilled vegetables, hard-cooked eggs, fresh crusty bread, or mild cheese.
Ingredients:
1 Anaheim chile, deveined and seeded, chopped
1 medium green bell pepper, deveined and seeded, chopped
1/2 Cup freshly chopped cilantro
1/2 Cup freshly chopped parsley
2 cloves garlic, diced
Zest of 1 lime Juice of 1 lime
1/2 Cup olive oil
Salt and freshly ground black pepper to taste
Directions
Combine all the ingredients thoroughly.
Store in the refrigerator and use in two or three days.
Yield:
1 cup
