Lemon Vinegar
This vinegar has a tangy, citrus taste. You can use it in any recipes calling for vinegar or lemon juice for an unusual effect. (Note: This vinegar is very strong. Use less than you would of regular vinegar.)
Ingredients
2 lemons, washed and sliced
2 cups white wine vinegar
Yield: 2 cups.
Directions

Place the lemon slices in a quart jar. Set this aside.

Bring the vinegar to a boil in a medium-sized saucepan. Pour the hot vinegar over the sliced lemons. Tightly cap jar.

Store the jar in a cool, dark place for two days.

Discard lemons. Strain the vinegar through a cheesecloth-lined sieve.

Return the vinegar to the jar or to a tall, clean bottle or several smaller bottles; cap and store on a cool, dark shelf.
The vinegar is now ready to use.
