This is a traditional Christmas recipe from Armenia.
In Armenia, all the villages fast one week before Christmas by eating no animal food and no food at all on the last day. On Christmas Eve, Pilav is eaten.
1 small onion
1 cup rice or cracked wheat
3 cups water
3/4 cup lamb
2 tsp. salt
3 tbsp. melted butter
1/4 tsp. pepper
Cut meat into cubes, and put into a saucepan with water and salt. Let boil until meat is nearly done. Then add rice or cracked wheat and cook 30 minutes, not allowing the stock to reduce to less than 21/2 cups. Brown finely chopped onion in butter and pour over the meat. Set aside for 15 minutes to settle.
