Fruit Slaw
Great to cool down on a hot summer day
Ingredients
3 cups finely shredded cabbage
1 cup thinly sliced celery
3/4 cup chopped walnuts
1/2 cup raisins
1 can (8-1/4 ounces) pineapple chunks in syrup
1 can (11 ounces) mandarin orange sections, drained
1 medium banana, peeled and sliced
1 carton (8 ounces) orange-flavored yogurt
1 tablespoon lemon juice
Makes 8 servings
Directions

Drain pineapple, reserving 2 tablespoons syrup.

In a small bowl, combine the reserved 2 tablespoons pineapple syrup, yogurt and lemon juice. Mix well.

In a large bowl, combine the drained pineapple, cabbage, mandarin oranges, celery, walnuts and raisins. Fold the yogurt dressing from the small bowl into the mixture. Gently fold in the banana.

Refrigerate, covered, until ready to serve. Serve chilled.
