Hawaiian Banana Bread 

Ingredients
2 cups sugar 
1 cup margarine 
6 extremely ripe medium-sized bananas, mashed 
4 eggs, well-beaten 
2-1/2 cups cake flour 
1 teaspoon salt 
2 teaspoons baking soda 

Directions:
(Follow the directions exactly or you will not have this beautiful texture and taste.

Preliminaries: 
Grease and flour two 9-by-5-by-3-inch loaf pans. Heat oven to 350 degrees. 

Procedure: 
Cream sugar and margarine. Add bananas and eggs. Sift flour, salt and baking soda three times; blend flour mixture into banana mixture. Do not overmix. 

Turn batter into prepared pans. Bake bread in preheated oven for 55 minutes, or until a toothpick tests dry in center of loaf. Turn out immediately to cool on a wire rack. 

Variation: 
If you want to make a larger quantity of loaves, make separate batches.

If your bananas are very large, you may use 4 bananas instead of 6. 

If you like, fold in 3/4 cup chopped walnuts and 1/2 cup dried currants that have been dredged in 4 teaspoons of flour just before spooning the batter into prepared pan. Bake as directed. 

Makes two loaves
