Super Soy Caesar
Salad
Ingredients:
3 heads Romaine lettuce, washed and cut into large pieces
1 egg yolk
1/4 cup soy parmesan
Juice of 1/2 lemon
2 small gloves of garlic
4-6 fillets of anchovies
1/3 cup olive oil
1 tsp. of worcestershire
1 tsp. Dijon mustard
Non-dairy croutons (optional)
Directions
Mix egg yolk, garlic, worcestershire, mustard, lemon juice, and anchovies in food
processor. Slowly add the olive oil. Season with salt and fresh ground pepper.
In a large mixing bowl toss Romaine lettuce with dressing, sprinkle in soy parmesan and fresh ground black pepper. Serve with croutons if desired.
